Real volcanic rock (also known as lava rock) stores and reflects the heat from the gas flames on your barbecue to provide a more regulated, even cooking temperature across the whole grill. It also catches some of the fat as it runs out of the food, protecting the burners and producing smoke to add a little extra flavour to your meat.
